Rotutu is a fully washed coffee from the Letefoho sub-district of Timor-Leste, grown at 1420 metres above sea level by a cooperative of 16 smallholder farmers. Rather than processing their own coffee, the Rotutu farmers sell ripe cherries directly to Karst — a model that incentivises selective picking, as farmers are paid a premium price per kilogram of cherry above the local commercial rate. Those cherries are then floated and pulped before being submerged and fermented for 40–44 hours. The beans are washed in up to six to eight passes, dried on raised beds for 10–14 days, and rested for six weeks before being transported to Dili for dry processing, screen grading, and a final hand sort ahead of export.
